A hyper seasonal, low impact restaurant in the heart of Hackney.

Taking our name from ‘the act of altering to improve’ it is our mission to challenge traditional thinking and wasteful practices in the food industry through elevated plant based dining experiences.

We replace the intensively produced, the homogeneous varieties and the unnecessary waste, with the regenerative, the natural, the harmless and the wild, restoring a sense of connection with our food sources.

“BEET, WHAT DO YOU WANT TO BE?”

Inspired by a Modern British style of gastronomy, our dishes showcase the finest seasonal, local and sustainable produce placing it centre-stage as the star of every plate.

We source from small-scale farms, foragers and independent producers who use regenerative and minimal intervention methods, and we embrace creative ‘root-to-fruit’ preparations to ensure minimal waste.

Responding to seasonal availability, our Tasting Menu changes weekly, sometimes daily, and is paired with a fine selection of low intervention + local wines, beers, ciders and cocktails by our in-house sommelier.

SOMETIMES, LESS IS MORE.

Designed by our founder, Elly Ward, a qualified architectural and interior designer, the restaurant is an exercise in adaptive re-use and minimal intervention, showcasing sustainable materials and the concepts of circular design.

Original brick walls and cast iron columns are left exposed, existing steel and copper elements reused, and additions made from renewable and recyclable resources such as cork and timber, along with reclaimed furniture and tables made from recycled wood waste.

The bar and kitchen wall are covered in rescued red terracotta tiles, rejected as imperfect but perfectly useable, much like the ‘wonky fruit’ of the food industry.
